FISHING THAT RESPECTS THE SEAS
We fish our anchovies respecting the sea and in selected areas. We use lampare, as we used to do in the past, and wrap the shoals in purse seine nets, a sustainable technique that ensures intact fish with firm flesh and preserves the seabed. This is why our products also boast MSC and Friend of the Sea certifications.

We are the oldest fish canning company in the industry, and for five generations we have passed on passion and knowledge from father to son, on the path of innovation. We have been defending our quality since 1906.
RAW MATERIAL
We process anchovies from the Cantabrian Sea and the Mediterranean Sea. We select only the best batches of fish and excellent ingredients, following a scrupulous quality protocol that admits no exceptions.

LONG MATURATION TIMES
Our Sicilian salters follow the fish throughout its maturation. An ancient craft handed down through generations. The salter decides the correct amount of salt to be dosed according to the type, size and fat content of the fish and the right degree of pressing. The anchovies rest for at least four months in temperature-controlled barrels to reach perfect maturation.
Goodness is a matter of time.

We select only the best batches of fresh fish and do everything by hand: the scapatura, the processing, the canning, the inspections.One by one, our anchovies are a product of artisan excellence.
We guarantee salting within 24 hours of fishing and long
of maturation. The result is an unmistakable product with a delicate taste and unique texture.
