The Colatura di Alici is an amber-colored liquid sauce obtained from the slow filtering of the liquid exuded from the anchovies during their maturation process inside barrels.
The Colatura thus express the best nutritional and sensorial characteristics of anchovies, with a distinctive rich and savory flavor, perfect to use as a substitute of salt. The Colatura is a traditional product of the Amalfi Coast, where it was commonly gifted at Christmas, and used to prepare the fish dishes for Christmas dinner.
