Anchovies in the Adriatic Sea come from waters rich in nutrients for anchovy life. Processed entirely by hand at the fishing site, they are left to mature in barrels until the right degree of ripeness for a unique taste and quality.
Our anchovies are caught using the purse seine method with the use of lampare, which safeguards the marine ecosystem while leaving the anchovies intact.
