We fish only quality anchovies using the purse seine method, which preserves the seabed and raw material. We select the best ones, which are then processed by hand directly at the fishing site and left to mature in barrels for at least 4 months. At that point we package them in sunflower oil, with all the care that only our centuries of experience can give.
