How to make : Fillets of Mackerel Imperial Selection, salad of oranges and fennel
Cut the fennel into slices.
Peel the oranges sharply, that is, also removing the outer skin of the segments. Cut the oranges into slices.
Place the oranges and fennel in a fairly large bowl and add thinly sliced fresh onion to taste. Season the salad with salt, pepper and a drizzle of extra virgin olive oil.
Plate the fennel and orange salad with two fillets of grilled Imperial Selection Mackerel.
Garnish with chopped unpeeled mandarins and fennel tufts.
