How to make : Italian-style fajitas with Mackerel fillets Selezione Imperiale and yogurt sauce
Prepare the cream of beans and peppers:
– In a saucepan, sauté the chopped onion and grated garlic in a little oil until soft.
– Add the diced peppers and continue to cook for a few minutes.
– Add the smoked paprika, sugar and tomato paste, stirring well.
– Add the red beans, water and bring to a boil.
– Incorporate the cornstarch and lime juice, stirring until creamy.
– Finally, add a pinch of chopped fresh parsley. Remove from heat and allow to cool slightly.
Prepare the yogurt sauce:
– In a bowl, combine the Greek yogurt, chopped chives, lime juice, a drizzle of oil, and salt and pepper.
– Mix well until smooth.
Stuffing the tortilla:
– On each tortilla, spread a layer of cream of beans and peppers, add a spoonful of yogurt sauce and top with a fillet of Rizzoli Mackerel.
– Roll the tortilla on itself to stuff well.
