Italian-style fajitas with Mackerel fillets Selezione Imperiale and yogurt sauce

Ingredients

  • 2 Tortillas
  • 1 package Pre-cooked red beans
  • 1 package Mackerel fillets Selezione Imperiale
  • as required Tomato concentrate
  • 4 Garlic cloves and 1 onion
  • as required Smoked paprika
  • 2 Lime
  • 2 Red peppers
  • 200 ml Greek yogurt
  • 50 g Cornstarch
  • 2 Spoonfuls of sugar
  • as required Olive oil and parsley
  • as required Chives, salt and pepper

Process

How to make : Italian-style fajitas with Mackerel fillets Selezione Imperiale and yogurt sauce
  • Prepare the cream of beans and peppers:
    – In a saucepan, sauté the chopped onion and grated garlic in a little oil until soft.
    – Add the diced peppers and continue to cook for a few minutes.
    – Add the smoked paprika, sugar and tomato paste, stirring well.
    – Add the red beans, water and bring to a boil.
    – Incorporate the cornstarch and lime juice, stirring until creamy.
    – Finally, add a pinch of chopped fresh parsley. Remove from heat and allow to cool slightly.
  • Prepare the yogurt sauce:
    – In a bowl, combine the Greek yogurt, chopped chives, lime juice, a drizzle of oil, and salt and pepper.
    – Mix well until smooth.
  • Stuffing the tortilla:
    – On each tortilla, spread a layer of cream of beans and peppers, add a spoonful of yogurt sauce and top with a fillet of Rizzoli  Mackerel.
    – Roll the tortilla on itself to stuff well.
