Spaghetti with 3 Tomatoes with Anchovies in Spiced Sauce and Burrata

Ingredients

  • 150 g Spaghetti
  • 1 package Anchovy Fillets in Spiced Sauce
  • 15 Yellow tomatoes
  • 15 Date tomatoes
  • 5 San Marzano Tomatoes
  • 1 Burrata
  • as required Garlic, onion, basil, evo oil, salt and pepper
  • as required Thyme and basil

Process

How to make : Spaghetti with 3 Tomatoes with Anchovies in Spiced Sauce and Burrata
  • Roast the tomatoes:
    – Preheat the oven to 210 degrees.
    – In a baking dish, arrange tomatoes cut in half with the cut side facing up.
    – Season with a clove of garlic, sliced onion, a drizzle of oil, pepper, salt and fresh basil.
    – Bake and roast for about 15 minutes, until the tomatoes are nicely caramelized.
  • Prepare the burrata sauce:
    – In a blender, combine the parsley, thyme and burrata.
    – Blend until smooth. Transfer the sauce to a piping bag and set aside.
  • Prepare the three-tomato sauce:
    – Blend the tomatoes and sieve them.
    – Pour the sauce into a pan and cook for a few minutes, adding a little spaghetti cooking water if necessary, until the desired consistency is achieved.
  • Cook spaghetti:
    – Cook spaghetti in plenty of salted water following the directions on the package. Drain them when al dente, reserving some of the cooking water. Add the spaghetti to the three-tomato sauce and mix well.
  • Plate:
    – Plate the spaghetti, add the burrata sauce, garnish with anchovies in Spiced sauce and top with a drizzle of burrata sauce.
